Yes, I have strikes again and this one is a definite crowd pleaser. It is so easy to make but just takes a little time and patient. I demand that you try this at your next dinner party or picnic you will wow your guests with this creamy creation. Enjoy

- Biscuit
- 1/2 cup pitted dates soaked for one hour
- 2 Tablespoons of cacao
- 1 cup of shredded coconut
- optional chia seeds 1 tablespoon
- Filling
- 1/2 cup cashew nuts soaked overnight
- 3 tablespoons coconut milk
- 2 tablespoon coconut oil melted
- 1/2 teaspoon vanilla essence
- 1 teaspoon rice malt syrup/ stevia/ agave
- 1 tablespoon shredded coconut

- Biscuit
- Blend/ Process the dates until it forms a paste
- Add the cacao and coconut
- Mix everything together until it forms a dough
- Add more coconut if to stick
- Roll out into little balls
- Flatten the balls to form a disc and refrigerate
- Filling
- Blend the coconut oil, cashews, syrup, and coconut milk altogether
- add the coconut and stir through
- Place in the fridge for 3 hours to set
- Once the filling has set place a teaspoon on half the biscuits
- Place the other biscuits on to form a sandwich
- Place in the fridge for an hour to set
- Enjoy!!!!!
