Yes, I have strikes again and this one is a definite crowd pleaser. It is so easy to make but just takes a little time and patient. I demand that you try this at your next dinner party or picnic you will wow your guests with this creamy creation. Enjoy

  • Biscuit
    • 1/2 cup pitted dates soaked for one hour
    • 2 Tablespoons of cacao
    • 1 cup of shredded coconut
    • optional chia seeds 1 tablespoon
  • Filling
    • 1/2 cup cashew nuts soaked overnight
    • 3 tablespoons coconut milk
    • 2 tablespoon coconut oil melted
    • 1/2 teaspoon vanilla essence
    • 1 teaspoon rice malt syrup/ stevia/ agave
    • 1 tablespoon shredded coconut

  1. Biscuit
    1. Blend/ Process the dates until it forms a paste
    2. Add the cacao and coconut
    3. Mix everything together until it forms a dough
    4. Add more coconut if to stick
    5. Roll out into little balls
    6. Flatten the balls to form a disc and refrigerate
  2. Filling
    1. Blend the coconut oil, cashews, syrup, and coconut milk altogether
    2. add the coconut and stir through
    3. Place in the fridge for 3 hours to set
  3. Once the filling has set place a teaspoon on half the biscuits
  4. Place the other biscuits on to form a sandwich
  5. Place in the fridge for an hour to set
  6. Enjoy!!!!!
