Tropical Lime Sublime Chia Cup
This is an end of summer special. Normally my chia cups are creamy and chocolatey but this cup is tangy and has a tropical twist and is super easy to make. Chia is super high in fibre and is a great source of protein. I recommend chia to the health conscious dessert lover as these seeds swell up and will keep you nice and full. The berries are loaded with antioxidants and have a great colour to them. Give this recipe a go and feel free to add whatever fruit you have in the kitchen and play with the layers.
Ingredients:
- 1/4 cup of chia seeds
- 1 cup of water/ coconut water
- 1/2 cup of mixed berries
- squeeze of half a lime
- Alpine coconut yoghurt/ greek yoghurt
- Buckinis/Muesli
Method:
- Blend the berries, lime and water together
- Mix the liquid blend with the chia seeds and set aside to sit for 15 mins
- Stir the berry chia mix
- Layer the berry mix, muesli and yoghurt as you please
- top with a squeeze of lime
