Ingredients:

o 2 Ripe Bananas

o 3 Eggs

o Two Serves Protein Powder (equivalent to 50gm protein)

o 1 Cup Almond Meal

o ½ Cup coconut Flour

o One tablespoon agave/ drops of stevia/ natural sweetener of choice

o 1 teaspoon Vanilla extract

o 1 Teaspoon Cinnamon

o 1 teaspoon baking powder

o 1 heaped tablespoon coconut oil

o 6 crushed walnuts

o ¼ cup slithered almonds

o Pinch of Salt

 

Method:

1. Combine the dry ingredients together in a bowl (flours, salt, spices, walnuts)

2. Mash the banana and combine wet ingredients together (eggs, banana, vanilla, coconut oil)

3. Combine the wet and dry ingredients together and mix together until just combined (do not over mix)

4. Pour the batter into a cake/ muffin tin and cover with slithered almonds

5. Bake at 160 degrees until golden brown (20 mins)
